Black Velvet Peanut Butter Pomegranate Smush Cookies

Baking is my love language.

I LOVE coming up with new recipes – and this one… this one is a home run. First time playing out this recipe was the charm and yesterday…. well yesterday I baked up about 5 dozen of these ooey, gooey, chocolaty and chewy baaaad boys.

Half the time I wore my fire red, thigh high, stiletto heels and had a glass of wine in my hand.

Only half, because that combo will tire out even the best of supermodels real quick.

In the end of it all… here is the recipe for you to make!!

Black Velvet Pomegranate Smush Cookies

Ingredients:

  • 1 stick of real butter at room temp (1/2 Cup or 113 grams)
  • 3/4 cup CRUNCHY peanut butter
  • 1 1/3 Cup sugar
  • 1 egg
  • 2 TBSP milk of choice (in my first I used oat milk and second I used almond… I preferred the oat milk by a slight margin)
  • 2 tsp real vanilla extract – it really makes a difference
  • 3 TBSP unsweetened cocoa powder
  • 1 1/2 Cups all purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • sugar for dusting
  • chocolate topper of choice (I like cut up Swiss chocolate, but any chocolate will do)
  • pomegranate seeds

Directions:

  1. Start by heating your oven to 375 F
  2. Beat the butter, peanut butter and sugar in a stand mixer on medium speed until thoroughly mixed.
  3. Turn mixer to low and add in the vanilla, egg, and milk – once added blend on medium high until the mixture becomes light and fluffy.
  4. In separate bowl combine the cocoa, flour, soda and salt.
  5. Turn mixer to slow and slowly combine the dry ingredients into the wet – let the mixture beat together until it is just combined.
  6. Remove mixer bowl from stand and take dough into 1 inch round balls
  7. Place sugar for dusting in a bowl and roll the 1 inch balls into the sugar
  8. Place cookies on prepared cookie sheet, keep cookies about 2 inches apart from each other.
  9. Bake for 8 – 10 minutes
  10. Remove from oven and immediately add a small scoop of pomegranate and some chocolate into the center of each cookie.

Please note that you don’t need to place a lot of pomegranate at a time into the cookies… it is very difficult to keep it in your hand or in a spoon while trying to flip it into the center of the cookie… add small amounts at a time until you are satisfied with the cookie!

Also, don’t confuse these with “Kiss” cookies, you know, the ones that are perfectly shaped with the happy little kiss in the middle. These are made to be imperfect so you know they’re ready to fall apart in your hands because they are that damn ooey, gooey and chewy.
