Sweet Potato Hash

So I haven’t been blogging like I should..

I’ve been burnt out. It’s the first Friday in a very long time that I am not having to write meal plans or do check ins… and to be honest, I am quite happy about it. I have been working a full time job, doing private counseling and also buying and selling clothes (for fun) for a long time (three years or more, who knows at this point).

I need more than a two week vacation break.

And I need a vacation where I’m not working with clients. I haven’t had one of those in three years either.

One thing I found myself not doing anymore is baking/cooking/reveling in the taste of delicious foods that I myself make then shove into my mouth. There is just something so satisfying knowing that “I” did this. I made this. And it’s sooo delicious. And it makes me happy… so why did I stop?

Anyway… straight to it.


Spiral Sweet Potato Hash


Prep time: 15 minutes

Cook time: 15 minutes


Ingredients: 

  • One large sweet potato – Spiralized
  • 2 chicken sausage links (I use Aidells chicken and apple – got it as Costco)
  • one large onion – diced
  • 1 TBSP minced garlic
  • 5 eggs

Directions:

  1. Add enough olive oil to coat pan and set heat to medium. (I use a large iron skillet)
  2. Add diced onion and garlic to pan and heat until brown – stirring occasionally.
  3. Chop sausages and add to pan – stir.
  4. Add spiraled sweet potato to pan – crack eggs on into sweet potato close to the edges (they cook better) – cover with lid and cook until the eggs are cooked to desired doneness. (about 10 – 15 minutes)
  5. ENJOY!

Serves 2 – 3 depending on hunger levels.

I served with Everything but the Bagel seasoning. Love that stuff.

I often turn the heat up a bit so I burn the onions and sausage just a bit – nuts maybe but I love that taste.

I also love burnt popcorn.
