So I threw a party and it was GREAT.
For that party I made this hummus because I finally found pine nuts (in bulk at HEB, love that place)
I hate looking up recipes with long intros so I will get right to the point.
Pine Nut Party Hummus
Ingredients:
- 1 (15 oz) can of chickpeas, drained and rinsed
- 1/3 cup tahini (stir well)
- 1/4 cup lemon juice
- 1 clove garlic
- 2 TBSP olive oil
- 2 -4 TBSP water
- dash of salt
- dash of Italian seasoning
Toppings:
- handful of pine nuts
- scoop of minced garlic
- 1 TBSP olive oil
- Italian seasoning
- paprika
Directions:
- Put all ingredients (sans toppings) into a food processor or into a bullet (I used my smoothie cup on my ninja) starting with only 2 TBSP of water, adding more as needed, and blend until smooth. Move to bowl
- For topping, place pine nuts in skillet over medium-low heat and toast until golden brown, stirring often.
- Add olive oil , garlic and Italian seasoning to pine nuts and toast on low until warm (about one minute)
- Top hummus with pine nut mix and top with paprika as you see fit
You can store this in an airtight container for up to one week, if it makes it past your party 😀
I would like to just say that I had a hellofa time finding pine nuts. I drove all over Dallas and went to all the different stores. Neither Whole Foods or Trader Joe’s provided. I actually felt like the workers at Whole Foods found it funny I was looking for pine nuts.
If you aren’t in the Dallas area or don’t have a wonderful HEB nearby.. I can only recommend Amazon, you can get anything and everything there.
Anyway, HEB came through. They have it in bulk – it is an expensive item, but at least this way you can control the amount (and get it at a cheaper price per ounce) yourself. You only need a little bit for this recipe… but it is a recipe you will want to make again and again and again… One of those you need to keep in your recipe books.
